Something really monumental happened to me this week, and when I say “monumental,” I mean monumental.
I came up with my own recipe and it didn’t turn out badly.
I realize for most people this wouldn’t be a monumental thing, but for me it’s pretty significant. If you’ve been following this blog since way back in October, you probably know that I have a poor track record when it comes to concocting my own recipes. My sister and I tried to make coffee muffins several months ago. It seemed like a harmless idea at the time, but they ended up almost breaking my teeth and being one of the most disgusting things I’ve ever tasted. Since then, I’ve pretty much avoided devising my own recipes. Basically everything I bake comes from a tried-and-tested list of ingredients.
But this week, I had to do something different. There were a couple of overripe bananas sitting on my counter, and rather than let them go to waste, I decided I would whip up some banana bread. I pulled up a recipe online and began mixing my ingredients, but quickly realized that I didn’t have the majority of the items that the recipe called for. Rather than throw out the batter, I figured I would improvise. Thus, this recipe was born.
One thing you can pretty much guarantee with any food I make is that it’s going to be simple. I’m not much of a baker, so when I do cook, I don’t make dishes that are very complicated. I seriously wish I could make some of the things that I see other bloggers create, but I’m definitely not that skilled.
Anyways, this peanut butter banana bread is a simple and tasty snack food that is great if you need to use up some browning bananas. It has a nice flavor and it’s fantastic if you’re looking for something that’s sweet, but not too sugary.

Here are the items you’ll need for your banana bread!
Things You’ll Need:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter
- 1/2 cup granulated sugar
- 2 tablespoons peanut butter
- 2 eggs
- 2 overripe bananas
Directions:
1. In an electric mixer, combine flour, baking soda, salt, and granulated sugar.
2. Add in eggs, butter, and bananas. Blend the ingredients together until the batter is smooth.
3. Add in peanut butter. In the ingredients list, I said to use 2 tablespoons, but the amount is really up to your personal preference. If you’re a big peanut butter person, I suggest adding more. With 2 tablespoons, the peanut butter flavor was very subtle.
4. Pour mixture in a bread pan and cook in a 350 degree oven for 60 minutes, or until golden brown.

That looks and sounds delish! I love banana nut bread, and peanut butter always tastes good with banana so I know this is a great recipe! I’ll have to tell my granny about it, she’ll probably say that’s nothing new to her lol she is never without peanut butter

I just tried this recipe, it’s amazing!! I added some cinnamon-sugar on top before I baked it, and that’s a good addition I thought.
Thanks for sharing this recipe, I really loved it!! Also, I find that using 5 tablespoons peanut butter is just the right amount if you absolutely LOVE peanut butter.
