Baking Adventures: Coffee Muffins

Hello there,

I knew this was a bad idea, but I did it anyway…I tried to make coffee muffins. I thought it would be a fun, easy breakfast item that I could eat on busy mornings to get food and coffee at the same time. Big mistake. Just like my last baking adventure, this one turned out horribly wrong. I really should stick to recipes.

My Original Recipe:

  • 2 cups flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 eggs
  • 1 cup milk
  • 1 cup butter
  • 1/2 cup coffee beans

Directions: Preheat oven to 425 degrees. Combine dry ingredients in an electric mixer and stir. Slowly add in eggs, milk, and butter. Smash coffee beans excessively. This is the most exciting part of the process, so have fun with it. Mix smashed coffee beans into batter. Pour batter into greased muffin pan. Cook for fifteen minutes or until done.

Now time for the coffee beans, which can also be referred to as the death of these muffins. Using a rolling pin, I broke these coffee beans up into little pieces. I didn’t ground them nearly enough. I later found huge chunks in the muffins.

In this shot, I’m getting the muffins ready to go into the oven. I don’t know if you can tell, but the batter is very chunky. This would be a result of my inability to break up coffee beans.

Although they look delicious, these muffins were anything but. The large pieces of coffee beans were too much to handle. If I redid this recipe, I would add a cup of brewed coffee instead. It would give you the coffee flavor without the unnecessary texture.

 

 

Revised Recipe:

  • 2 cups flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 eggs
  • 1 cup milk
  • 1 cup butter
  • 1/2 cup brewed coffee

(These should taste much better)
