I don’t remember the last time I posted a recipe here on Currently, Lately, but I do know that it’s been a while. And I do mean A WHILE. Like, I’m pretty sure it was snowing outside the last time I decided to share something I baked.
The only defense I can think of for why it has been so long since my latest recipe post is that I have a hard time remembering to photograph things before I eat them. If it weren’t for the fact that I have very little self control around freshly baked desserts (chocolate ones, in particular), you’d be seeing a lot more.
That being said, today I managed to snap a photo of what I made just before I ate it. So, I’ll be sharing a recipe for a trifle.
A peanut butter brownie trifle.
Now, I know I say this every time I do a recipe post, but you NEED to make this. Seriously. If you’ve got the ingredients in your fridge right now, get them out and start cooking. I promise you won’t regret it. This trifle is that good.
Anyway, without any further delay, here’s the recipe!
PEANUT BUTTER BROWNIE TRIFLE
BROWNIES
Ingredients:
- 3/4 cup of cocoa powder
- 1/2 teaspoon baking soda
- 2/3 cup melted butter
- 1/2 cup boiling water
- 2 cups sugar
- 2 eggs
- 1 1/3 cups all-purpose flour
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
Directions:
- Preheat oven to 350 degrees.
- In a mixing bowl, combine cocoa powder and baking soda.
- Slowly add in 1/3 cup of melted butter.
- Place boiling water in the bowl. Stir until this mixture thickens.
- Add in eggs, sugar, and 1/3 cup of butter.
- Add in in salt, vanilla, and flour. Mix well.
- Put in cup of chocolate chips.
- Bake for 30-40 minutes or until thoroughly cooked.
PEANUT BUTTER MOUSE
Ingredients:
- 1 cup of peanut butter
- 2 cups of heavy whipping cream
- 1 cup of powdered sugar
Directions:
- In an electric mixer, combine the peanut butter, whipping cream, and powdered sugar.
- Blend ingredients until smooth.
WHIPPED CREAM
Ingredients:
- 2 cups of heavy whipping cream
- 1/4 of powdered sugar
- 1 teaspoon of vanilla
Directions:
- In an electric mixer, combine the ingredients.
- Allow the ingredients to mix until they reach a whipped cream consistency.
ASSEMBLY
- Cut your sheet of brownies into bite-sized squares.
- Place a layer of brownies on the bottom of a large trifle dish.
- Cover the brownie layer with a layer of peanut butter mouse.
- Cover the peanut butter mouse with a layer of whipped cream.
- Repeat steps 2-4 until you have reached the top of the trifle dish.
- Add chocolate chip garnish.
- Enjoy 🙂
