It’s been a while since I’ve put up any food-related content, so today I thought I’d share a fun cookie recipe! The cookies I’m bringing you today are not only fun and delicious, but they’re also really festive and put together. Can we talk about how pretty this cookie is for a second? It reminds me of Pinterest, or a carefully curated Instagram theme. If this cookie were a person, it would have its life together. It would go on morning jogs and drink smoothies every day, which is a lot more than I can say about the last dessert I tried to make.
Enough of me rambling about cookies. If you’re having a beach-themed party anytime soon, or you just want to enjoy a festive treat, here’s a quick and easy recipe for you!
What You’ll Need:
For cookies:
- 1 1/2 cups flour
- 1/2 cup butter
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1 egg
- 2 teaspoons vanilla extract
For decorations:
- 1 tablespoon granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 cup sliced almonds
Directions:
To get started, preheat your oven to 350 degrees. (About 176 degrees for all of you who use the metric system. Not sure why we don’t in the US. Lol it only seems to complicate things).
Next, gather your dry ingredients (flour, salt, sugar, baking soda) and combine them in a small bowl. Follow the same procedure with your wet ingredients (butter, vanilla extract, egg), making sure to beat them together thoroughly. When finished, combine the two separate mixtures in a large bowl and place them under an electric mixer. Allow them to stir together until the dough is evenly mixed.
Once your dough is complete, form it into balls roughly the size of a tablespoon. Place the rolled dough on a baking sheet, leaving about 2 inches between each cookie. Then, taking the flat bottom of a wide cup, press down on the rolled balls until they are flat and even. Use your fingers to flatten any uneven areas if necessary. (You also may want to cover the bottom of your cup in flour to avoid sticking!)
To give your cookies the sand dollar look, combine your cinnamon and sugar in a separate bowl and sprinkle it over the top of your cookies. Then, gently press 5 almond slices into each cookie, following the star-like pattern of a sand dollar.
Bake in oven for roughly 10-12 minutes, or until slightly golden. Remove cookies from baking sheet and transfer to a wire rack for cooling.
As you can see, this is a fairly simple recipe with some pretty cool results. I love the fact that these look like they took a lot of time and energy, but in reality took no more than your average cookie.

Yum, saving this! I like how you compared this cookie to a certain type of person. Great analogy. I love chocolate chip cookies, but there has to be room for other cookies like this.

These are super adorable and creative; I love them! My personal favorite cookie is the ricotta cookie, but I’m also slightly lactose intolerant…so I must express caution while trying to enjoy them, haha! Wonderful food post!
