Before I get into today’s post, I want to give a quick apology for my lack of blog posts lately. If you read my June goals, you know that I’m currently in the process of writing a bunch of posts in advance because I have a pretty busy few months ahead of me. That being said, I haven’t been allotting myself much time to write posts that I immediately publish. As soon as I’ve gotten everything figured out, I promise my posting will be back to a more consistent schedule.
Anyways, today I thought that I would share a new cookie recipe that I stumbled upon recently! These pecan sandies make for such a great snack or dessert. They’re sweet, tasty, and perfect with a cup of coffee. They’ve got a nice, crunchy texture and that melt-in-your-mouth consistency that you find in shortbread.
I should warn you, though, that these cookies are very crumbly. If you’re the type of person who likes to break cookies up as they eat them, you’ll have to resist the urge when snacking on these. I learned this lesson the hard way. When I was photographing these sandies, I decided to break one of them apart so I could capture a shot of the inside. The cookie ended up crumbling to pieces and creating a huge mess all over my contact paper. These cookies are really good, but definitely keep this mind.
What You’ll Need:
- 4 cups flour
- 2 cups chopped pecans
- 2 cups butter
- 2 tablespoons water
- 1 cup powdered sugar
- 1 tablespoon vanilla
Steps:
- First, preheat your oven to 350 degrees.
- Then, in an electric mixer, beat together sugar and butter. Gradually add in your water and vanilla.
- Stir in your flour and then your chopped pecans.
- Taking the dough, form small balls and set them on an ungreased cookie sheet. Make sure to keep several inches between each of the cookies.
- Bake cookies for 20 minutes or until golden brown. Remove them from oven and place on wire rack.
- While the cookies are still warm, roll them in powdered sugar.
- Enjoy 🙂
