Question: What’s better than a trifle?
Answer: A mint chocolate brownie trifle.
With St. Patrick’s Day being yesterday, I wanted to whip up a dessert that tasted great and encapsulated the festivities of the holiday. This trifle managed to do just that. If you like mint and chocolate, you’ll fall in love with this completely.
This dish is a little bit more complicated than most that I make, but I promise that it’s worth the hassle.
Step One: Brownies
What you’ll need:
- 3/4 cup of Hershey’s Cocoa
- 1/2 teaspoon baking soda
- 2/3 cup melted butter
- 1/2 cup boiling water
- 2 cups sugar
- 2 eggs
- 1 1/3 cups all-purpose flour
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
Directions:
- Preheat oven to 350 degrees.
- In a mixing bowl, combine cocoa powder and baking soda.
- Slowly add in 1/3 cup of melted butter.
- Place boiling water in the bowl. Stir until this mixture thickens.
- Add in eggs, sugar, and 1/3 cup of butter.
- Add in in salt, vanilla, and flour. Mix well.
- Put in cup of chocolate chips.
- Bake for 30-40 minutes or until thoroughly cooked.
Step Two: Whipped Cream
Ingredients:
- 2 cups of whipping cream
- 1/3 cup powdered sugar
- green food coloring
Directions:
- Beat whipping cream and powdered sugar together in an electric mixture until stiff.
- Add in green food coloring to your preference.
Step Three: Mouse
Ingredients:
- 1 pkg white chocolate chips
- 2 cups heavy whipping cream
- 1 teaspoon peppermint extract
- green food coloring
Directions:
- In a saucepan, melt package of white chocolate chips with 2 cups of heavy whipping cream, and peppermint extract until smooth.
- Once cooled, combine with whipped cream.
Step Four: Assembly
Ingredients:
- brownies
- mouse mixture
- trifle dish
- Andes mints (broken into bits)
- Additional whipped cream (at your preference)
Directions
- In a trifle dish, break up brownies and place an even layer across the bottom.
- Cover first layer of brownies with a layer of mouse.
- Add a layer of whipped cream.
- Repeat the process until the dish is full and then sprinkle the top with broken up bits of Andes mints for decoration.
- Enjoy!
